Vindalo or Vindaloo Masala. The term Vindalho derives from the Portuguese dish "Carne de Vinha d' Alhos". Meaning meat cured in wine and garlic. Back in times gone by, to this imported meat the locals gave it, their own treatment of spices. Vindalo is a popular spicy hot side dish often made with pork or fish in Goa, India, a former portuguese colony.
