BIRYANI VEGETABLE RICE

Sweet, aromatic, flavourful!

Ingredients:

 

• allow 1/4 cup of uncooked rice per person

• 1 cups long grain rice or Basmati

• 1 tsp salt

• 1 tbsp Himalaya Gourmet Biryani Masala

• 1 cups diced vegetables (Carrots, cauliflower, green beans or green peas)

• 1½ cups cold water

• 1 tbsp butter

 

Method:

 

Rinse rice in plenty of water. Drain well and place in a deep with a cover pan. Add butter and stir fry on medium heat on a stove top, until well coated with melted butter. Add measured water also add salt and Himalaya Gourmet Biryani Masala. Bring to a boil. Stir in the vegetables. Reduce heat to minimum and cook covered for 15 minutes. Fluff just once during cooking. Turn off the heat and it will continue to cook in its own heat until serving time. Prepare it 1/2 an hour before the arrival of guests. Serve with Himalaya Gourmet Lime Pickle.

 

Tip: Allow 1/4 cup of uncooked rice per person

VEGETABLE BIRYANI WITH BOILED EGGS OR TOFU

A casserole dish that is garnished with boiled eggs, fried onions, raisins, almonds, apricots and cashew nuts. Could be prepared, ahead of time. To warm the casserole, sprinkle ¼ cup water and microwave for 15 minutes.

Ingredients:

 

  • 4 cups steamed rice

  • 1 tbsp. vegetable oil

  • 2 cups vegetables (cubed such as green beans, carrots, turnips, cauliflower, peas, etc.)

  • 2 tbsp. sour cream/yogurt

  • 2 tbsp. Himalaya Gourmet Biryani Masala

  • ½ cup water

  • 1 tsp. salt

  • For garnish: 1 onion, apricots sliced fine, ½ cup each of raisins and nuts (almonds or cashew)

  • 2 boiled eggs, sliced

 

Method:

 

Sautee vegetables in oil until tender. Add Himalaya Gourmet Biryani masala, ½ cup water and salt. Stir in sour cream. To serve, layer a casserole with 2 cups steamed rice. Spread prepared vegetables on rice. Top with remaining rice.

 

Garnish:  Fry onions in butter. When caramelized, stir in almonds, cashews, raisins & apricots. Garnish with eggs & caramelized onion mixture. Serve. If you prefer use tofu squares with vegetables in lieu of eggs.

RAISIN BIRYANI RICE

A great way to jazz up a simple rice dish!

Ingredients

 

• 2 cups rice, rinsed

• 3 cups water

• 2 onions sliced fine

• 1/4 cup raisins

•1 tsp salt

• 2 tbsp butter or vegetable oil

• 1 tbsp Himalaya Gourmet Biryani

 

Method:

 

In a deep pan with a cover, fry onion in butter, until golden brown. Mix in raisins. Set aside in a bowl. In the same pan, add water, salt and Himalaya Gourmet Biryani Masala. Bring to a boil. Add rice and simmer on low heat for 15 minutes, covered. Mix in onions & raisins. Turn of heat. Cover. Let stand for 5 minutes. Serve.
