
COD OR LAKE FISH VINDALO (HOT)
A Goan favourite!
Ingredients:

1Kg fish cleaned, cut up

1 tsp. salt - sprinkle on fish
-
juice of half a lemon, squeeze over the fish

1 tbsp. vegetable oil
-
1 medium onion, diced fine
-
1 medium tomato, diced fine
-
3 tbsps. Himalaya Gourmet Vindalo Masala (paste)
-
1 cup water.
Method:
Fry onions in vegetable oil about a minute. Stir in diced tomatoes and Himalaya Gourmet Vindalo Masala. In about a few seconds add water. Stir and add fish slices. Simmer covered until cooked about 7 minutes. Tilt the pan gently, so that the fish is covered in the sauce. For extra sauce add 1/2 cup water. Add salt to taste. Turn off the heat. Serve with steamed rice. Accompany with Himalaya Gourmet Sweet Lime Pickle.
I love this recipe with other fish such as herrings,mackerels or sardines. Canned fish is equally tasty.

CHICKEN, LAMB OR PORK VINDALO
Ingredients:

300gms meat
-
1 tbsp. vegetable oil
-
½ cup onion, a small tomato, diced
-
2 tablespoons Himalaya Gourmet Vindalo Masala (paste)

½ cup water
Method:
Trim off excess fat from meat & cut into two inches cubes. Heat vegetable oil in a large pan on medium-high heat. When oil is hot, add meat and allow to brown on all sides. Lower heat to medium-low. Add diced onion & tomato. Cook until onions are soft and lightly browned, about 2 minutes. Add Himalaya Gourmet Vindalo Masala and 1/2 cup water. Cover and simmer for half an hour. Check periodically to be sure there is enough liquid in the pan and there is no scorching. Add more water as needed. Add salt to taste. Serve.

MUSHROOM VINDALO
Ingredients:

200gms Mushrooms
-
1 tbsp. vegetable oil
-
½ cup onion, a small tomato, diced
-
2 tablespoons Himalaya Gourmet Vindalo Masala (paste)

½ cup water
Method:
Trim mushrooms cut into pieces. Set aside.
Heat vegetable oil in a large pan on medium-high heat.
Add diced onion & tomato. Cook until onions are soft and lightly browned, about 2 minutes. Add mushrooms and Himalaya Gourmet Vindalo Masala. Stir fry for a while and add 1/2 cup water. Cover and simmer for half an hour. Add more water as needed. Add salt to taste. Serve.
